The process

Water spoils food.
Freeze-drying removes it gently.

The material is frozen first; ice then sublimates directly to vapour under vacuum — low temperature throughout, so structure, flavour and nutrition survive almost intact.

01 · Freezing

Freeze to lock

Blast-frozen deep below zero; fine ice crystals fix the cell structure before it can degrade.

02 · Primary drying

Sublimate under vacuum

Under vacuum, ice turns straight to vapour — no heat, no structural collapse.

Porous structure set

Bound moisture is removed as temperature rises, leaving a light porous body that rehydrates in seconds.
