Inside a freeze-dried instant coffee production line

Freeze-dried instant coffee commands a premium because it keeps aroma that spray-drying loses. Getting there takes a chain of machines, and the freeze dryer is only the last major step.

The process, step by step

  1. Roasting develops the flavour of the green beans.
  2. Grinding sets the particle size for efficient extraction.
  3. Extraction dissolves the soluble solids with hot water; the extract is held in storage tanks. Many producers also concentrate the extract before freezing, which reduces the water the freeze dryer has to remove.
  4. Freezing turns the extract into frozen slabs at deep-freeze temperature.
  5. Granulating breaks the frozen slabs into granules of the target size.
  6. Freeze-drying sublimates the ice under vacuum, leaving porous granules that dissolve instantly.
  7. Packing in low-humidity conditions, because the dry granules readily absorb moisture.

That quotation specified delivery 60 days after deposit and a one-year warranty. Every project is sized to its own capacity target, so treat these figures as a reference, not a standard package.

Where the quality is decided

The freeze dryer protects aroma, but it cannot restore what earlier steps lost. Roast profile, extraction yield and how cold and how fast the extract is frozen all shape the final cup. That is why we look at the whole line, not just the freeze dryer.
